Ingredients:
- 1 sliced onion
- 100 gm pineapple tidbits
- 1 tablespoon soy sauce
- 2 cloves garlic
- 150 gm boiled rice
- 2 tablespoon pineapple juice
- 1/2 teaspoon curry powder
- 1 red chilli
Instructions:
- In a frying pan heat oil and add the garlic, red chili and the onion and sizzle until golden brown.
- Add the rice, curry powder and soy sauce and stir-fry to separate the grains.
- Once hot add the pineapple juice and chunks and let it cook on low flame for 5 minutes or until the juice is absorbed.
- Garnish with coriander and serve hot.
