KETO STRAWBERRY ALMOND FLOUR MUFFINS

INGREDIENTS:

  • 2 1/2 cups Wholesome Yum Blanched Almond Flour
  • 1/2 tbsp Baking powder
  • 1/2 tsp Sea salt
  • 1/2 cup Wholesome Yum Keto Maple Syrup (or regular maple syrup if not keto)
  • 1/3 cup Butter (melted; or coconut oil for dairy-free)
  • 3 large Eggs
  • 1 tsp Vanilla extract
  • 1 cup Strawberries (chopped)

INSTRUCTIONS:

  1. Prep. Preheat an oven to 350 degrees F and line a muffin tin with paper or silicone liners.
  2. Mix dry ingredients. In a bowl, stir together almond flour, baking powder, and salt.
  3. Add wet ingredients. Whisk in keto maple syrup, melted butter, eggs, and vanilla.
  4. Add berries. Gently fold in strawberries.

  1. Pour. Spoon muffin batter evenly into muffin tin.
  2. Bake. Cook keto friendly strawberry muffins in the oven, until tops are golden and an inserted toothpick comes out clean.
